Edonia

Edonia is a French foodtech founded in 2023 in Paris by Hugo Valentin, Pierre Mignon and Nicolas Irlinger that turns spirulina microalgae into Edo, a textured ready-to-use protein ingredient made with its patented Edonization process developed with AgroParisTech. Sold B2B to food manufacturers and collective catering operators, Edo works as a meat alternative or a nutritional enhancer in everyday foods, with a clean-label two-ingredient recipe and a carbon footprint up to 27 times lower than meat. The company has signed around 20 industrial contracts representing EUR 30 million in pre-orders, counts Newrest and Aliive among its first clients, and is scaling from its Agen pilot to a full-scale production site.
